Ingredients
2 cups sugar
½ cup milk
¼ cup cocoa powder
1/2 cup (1 stick) butter
1 teaspoon vanilla
¼ teaspoon salt
½ cup peanut butter [PB]
3 cups old-fashioned oatmeal
Instructions
Mix milk, sugar, cocoa powder, and butter in a large sauce pan.
Stir the ingredients together over medium heat until they start to boil.
Remove the pan from heat, let cool for a minute, and then mix in the peanut butter, salt, and vanilla. Add the oatmeal.
Let the mixture cool for a minute. Then, using a scooper or a spoon, scoop out cookies onto a baking sheet or into a greased mini muffin tin.
Refrigerate until set or until ready to serve.
To scale this down and make it more manageable for one person to eat , you can easily use a quarter recipe. Just use a small saucepan instead of a large one, and use the following ratio of ingredients: ½ cup sugar 2 tablespoons milk 1 tablespoon cocoa powder 2 tablespoons butter pinch of salt 2 tablespoons peanut butter ¾ cups old-fashioned oatmeal
